I got an Indian cookbook a few months back and have started trying a recipe or so per week. This has been one of my favorites, and very easy to make (not to mention it is made from potatoes!)
1.5 pounds medium red potatoes (I usually use 10)
5 tbs canola oil
1/2 tsp mustard seeds
1/4 tsp ground tumeric
1 large yellow onion, halved and thinly sliced (~2 cups)
2 tsp salt
1/2 tsp cayenne
Slice the potatoes lengthwise into quarters. Then cut them crosswise into 1/8 inch thick slices.
Heat the oil in a large wok over high heat. When the oil begins to smoke, add the mustard seeds, covering the pan with a lid or spatter screen. After the seeds stop sputtering, add the tumeric and stir for a second. Immediately add the onion, potatoes, salt, and cayenne.
Toss well, cover, and cook on medium heat until the potatoes are tender, tossing occasionally, about 10-12 minutes.
